Pesto Rotini
Ingredients
- 2 box (16oz) Bentilia red lentil rotini pasta
- 2 cups Fresh basil
- 1 cup Shelled dry roasted pistachio nut
- 2-3 Cloves garlic
- ¼ – ½ cup Olive oil
- 1 tsp. Lemon zest
- ¼ cup Grated parmesan cheese
Instructions
- Bring 6 cups of salted water to a boil and cook red lentil Rotini pasta for 7-8 minutes as you would your regular pasta;
- While the pasta is cooking, put fresh basil, pistachios, garlic, ¼ cup oil, lemon zest and parmesan in the food processor;
- Puree until smooth, add oil as needed;
- Once the pasta is ready, rinse & drain;
- Toss the pasta with pesto;
- Serve.
