Pesto Rotini

Ingredients

  • 2 box (16oz) Bentilia red lentil rotini pasta
  • 2 cups Fresh basil
  • 1 cup Shelled dry roasted pistachio nut
  • 2-3 Cloves garlic
  • ¼ – ½ cup Olive oil
  • 1 tsp. Lemon zest
  • ¼ cup Grated parmesan cheese

Instructions

  1. Bring 6 cups of salted water to a boil and cook red lentil Rotini pasta for 7-8 minutes as you would your regular pasta;
  2. While the pasta is cooking, put fresh basil, pistachios, garlic, ¼ cup oil, lemon zest and parmesan in the food processor;
  3. Puree until smooth, add oil as needed;
  4. Once the pasta is ready, rinse & drain;
  5. Toss the pasta with pesto;
  6. Serve.
