Penne Arrabiata

Ingredients

  • 1 box (8 oz) Bentilia red lentil penne pasta
  • 1.5 tbsp. Olive oil
  • 1-2 Cloves garlic
  • ¾ cups Fresh chopped tomatoes
  • 1 tbsp. Tomato paste
  • 3 Fresh basil leaves, chopped
  • ¼ cup Parmesan cheese
  • 2 tbsp. Flat-leaf parsley finely chopped
  • ¼ tsp. Crushed red pepper flakes

Instructions

  1. Bring 3 cups of salted water to a boil and cook red lentil Penne pasta for 7-8 minutes as you would your regular pasta;
  2. Rinse & drain
  3. Add oil, garlic, and crushed red pepper to a skillet over medium heat and cook for 30 seconds;
  4. Add the whole tomatoes, tomato paste, and simmer for 10 minutes before removing from heat and adding the fresh basil;
  5. Add pasta & parmesan;
  6. Top with Parsley;
  7. Toss & Enjoy!
