Macaroni Salad

Ingredients

  • 1 box (8 oz) Bentilia red lentil macaroni pasta
  • 1/2 cup Red bell pepper, diced
  • ½ cup Celery, diced
  • ½ Red onion, diced
  • 2 Hard boiled eggs, chopped
  • ½ cup Sweet peas

 

Greek Yogurt Dressing

  • ¾ cup Greek yogurt
  • 1 tbsp. Lemon juice
  • 1 tsp. Apple cider vinegar
  • 1 tsp. Honey
  • ½ tsp. Dijon Mustard
  • Salt & Pepper to taste

Instructions

  1. Bring 3 cups of salted water to a boil and cook red lentil Macaroni pasta for 6-7 minutes as you would your regular pasta. Refrigerate;
  2. Combine cooled pasta with red bell pepper, celery, onion, eggs and peas in a large serving bowl;
  3. In a mixing bowl, combine and whisk all Greek yogurt dressing ingredients;
  4. Pour dressing on the ingredients, toss and serve.
