Penne Alla Vodka

  • 1 box (225g) Bentilia Red Lentil Penne
  • 1 tbsp EVOO
  • 1/2 onion, chopped
  • 2 cloves garlic, diced
  • 1/4 cup tomato paste
  • 1/2 cup sun-dried tomatoes (in oil)
  • 1/2 tsp chilli flakes
  • 1/2 tsp salt
  • 1/4 cup vodka
  • 2 1/2 cups water
  • 1 cup heavy cream or coconut cream
  • 1/4 cup Parmesan (optional)


  1. Heat a large pot over medium heat and add olive oil.
  2. Add diced onion and cook for 2-3 minutes. Add diced garlic to the pot and cook for another 2-3 minutes.
  3. Add in tomato paste, red pepper flakes and salt. Stir well.
  4. Pour in your vodka and deglaze the pan.
  5. Add water and Bentilia Penne and cook according to the package intructions, stirring frequently.
  6. When your pasta is almost done cooking, add in heavy cream and chopped sun-dried tomatoes, extra salt if needed and stir well to combine.
  7. Top with fresh herbs and parmesan and enjoy!
