Penne Alla Vodka
- 1 box (225g) Bentilia Red Lentil Penne
- 1 tbsp EVOO
- 1/2 onion, chopped
- 2 cloves garlic, diced
- 1/4 cup tomato paste
- 1/2 cup sun-dried tomatoes (in oil)
- 1/2 tsp chilli flakes
- 1/2 tsp salt
- 1/4 cup vodka
- 2 1/2 cups water
- 1 cup heavy cream or coconut cream
- 1/4 cup Parmesan (optional)
- Heat a large pot over medium heat and add olive oil.
- Add diced onion and cook for 2-3 minutes. Add diced garlic to the pot and cook for another 2-3 minutes.
- Add in tomato paste, red pepper flakes and salt. Stir well.
- Pour in your vodka and deglaze the pan.
- Add water and Bentilia Penne and cook according to the package intructions, stirring frequently.
- When your pasta is almost done cooking, add in heavy cream and chopped sun-dried tomatoes, extra salt if needed and stir well to combine.
- Top with fresh herbs and parmesan and enjoy!
